She has 1.5k subscribers, so just above your arbitrary cutoff but shes great.

Thinkerthemer is composed of the duo/couple Amy and Maggie. They review board games and Amy focuses on the crunchy, thinky parts and Maggie focuses on the thematic parts. They have really good taste in games and the reviews are very entertaining.

They have 4.5k subs, so quite a bit bigger, but still not huge

Eric Normand has a channel about functional programming (he started his podcast/youtube channel to help write his book on functional programming).

He has many podcasts going over famous papers (Turing Award papers in particular) in programming/computer science history and he is really interesting to listen to.

The ideas of the papers he covers are big, and it's almost a philosophy channel in the best way.
